Red Pepper & Feta Dip
Ingredients
1 big jarred red pepper
2/3 block of feta or vegan alternativeÂ
2 tbsp extra virgin olive oil
1 small clove of garlic (optional)
1 tbsp apple cider vinegarÂ
1/2 tsp paprika
Pinch of black pepperÂ
Serves 4
5 Minutes
Preparation
Blitz in blender until smooth. Top with extra virgin olive oil, seeds, nuts, herbs etcÂ
To make into a pasta sauce just add a little of the pasta soaking water to loosen it.
