Pesto Sweet Potatos
2 medium sweet potatoes
1/2 jar of pesto (bought or homemade)
Splash of extra virgin olive oil
Pinch of pink himalayan salt
Preheat the oven to 180°c.
Cut the sweet potatoes in half, add some criss cross marks to the top, add a little extra virgin olive oil and a pinch of pink himalayan salt.
Roast for around 45 minutes or until tender (depending on the size of them) then top with pesto and serve.
