Roasted Fig Salad

Ingredients

6 figs 

2 tbsp honey or maple syrup 

Half a pack of goats cheese (or vegan alternative) 

Drizzle of balsamic glaze

Handful of fresh parsley 

Handful of walnuts

Serves 2

20 Minutes

Preparation

Preheat the oven to 180°c.


Cut soft figs into 4 and place on a baking tray with parchment or oven liner. 


Top with honey / maple syrup and roast for 15 minutes or until gooey.


I've topped with goats cheese, but you can use vegan soft cheese, or cream cheese. 


Add broken up walnuts (pecans would also work), chopped parsley and balsamic glaze. 


Watercress and Palma ham goes well too.


Serve with fresh sourdough or as part of a salad.
