Smashed Peas On Toast
Ingredients
100g frozen peas
1/4 lemon zest and juice
Small handful of fresh herbs such as chives, mint or parsley or a mixture
1 small garlic
Pink himalayan salt and pepper
Spinkle of feta or vegan alternative
Spinkle of Sunflower seeds (toasted if you can)
Couple of cherry tomatoes chopped up
Splash of extra virgin olive oil
Sourdough, granary or gluten free bread

Preparation
Boil the kettle.Â
Place the peas in a bowl and top with boiling water, leave to defrost.Â
Chop the tomatoes into pieces and peel the garlic. Chop the fresh herbs up too.Â
Toast your bread and drain the peas.Â
To a nutribullet or bowl to use a stick blender add the chopped herbs, garlic, peas, lemon zest and juice. Blitz together until chunky but all incorporated. Add a pinch of salt and pepper and stir.Â
Top your toast with the smashed peas. I've then added crumbled feta, chopped tomatoes, sunflower seeds and finished with a splash of extra virgin olive oil.
You can top it as you like, egg, halloumi or salmon also work well. Simple, delicious and nutritious
